Tipperary Fairy Tree Baby 50ml

The Hawthorn Tree is widely referred to as the Fairy Tree in Ireland and is not to be disturbed. However, using a small amount of the leaves is acceptable and many foragers can still be spotted in Autumn collecting the fruits known as ‘Haws’ for syrups and jellies. However, in keeping with the tradition of appeasing the local fairies, a small cup of newly distilled spirit from each batch is left outside overnight at Tipperary Boutique Distillery for na Sí to enjoy first! Gin is the quintessential Summer drink and it was important for us to produce a unique Gin that celebrated the land here in the Golden Vale. Hawthorn Trees are a permanent and ancient part of the landscape here and just like using our own barley, which is primarily grown for our whiskey, it’s important for us to create amazing drinks using quality native ingredients that grow right outside our door.
